Trail Bytes, Feb. 2025: A Pineapple Surprise

Hello Chef,

Pineapples have long symbolized hospitality, warmth, and good cheer. A few years ago, we had some work done at the house. Spontaneously, after settling up with the crew leader, I handed him a pineapple.

He was very surprised to receive this unexpected gift, and he smiled broadly. I was happy too, watching his crew cut open that refreshing pineapple after working hard all day.

I’ll bet you have shared some pineapples, too. Dehydrated pineapples, of course.

Sharing is part of the fun of dehydrating fruit. Lately, I’ve been sharing pineapple rings with Dominique. She loves them. I saved some to share with the rest of the Swiss family this weekend, but I must confess: I have an open bag of dried pineapple on my desk as I write this, and the supply is dwindling.
