Peach Salsa Rice Salad. Perfect for summer hikes. July 02, 2021 |
Hello, Dominique and I just returned from a hiking holiday in Ticino. On two of the hikes, we trail-tested the Sushi Rice Salad recipe from the June newsletter, and this month’s Peach Salsa Rice Salad recipe. It was hot and sunny most days, but what’s an adventure without an occasional hail storm with a booming thunder soundtrack? The Peach Salsa Rice Salad became an instant favorite with Dominique. We enjoyed it again when we stopped for lunch on the drive back home. Even if you don’t have a backpacking trip planned, you can make the peach salsa for a party or cookout. The recipe has been added to the No-cook Backpacking Meals page. It includes how to make and dehydrate the salsa, how to dehydrate the short-grain rice, and how to assemble and rehydrate the meal.
